Banana Pancakes

Method

  • In a bowl, mash the banana with a fork until it makes a puree. 

  • Stir in the eggs, baking powder and vanilla essence. 

  • Heat a pan on a medium heat and add the olive oil. Pour a quarter of the mix into the pan and cook for 1 minute on each side.

  • Continue with the rest of the mix, then top with the pecans and raspberries.
